- 600ml freshly squeezed watermelon juice
- 200g strawberries (fresh or frozen)
- 75g raspberries (fresh or frozen)
- 1 tbsp lime juice
- 1 tbsp fresh mint leaves
Method
Step 1:
To make the watermelon juice, blitz watermelon flesh in a food processor and then pour through a sieve to strain out any chunks.
Step 2:
Combine all ingredients in a blender or food processor, and blend until combined and smooth. Strain through a fine sieve (optional).
Step 3:
Pour into moulds (we used ones that hold 80ml, but you could use any size or mould you desire). Freeze until just starting to set.
Step 4:
Insert pop sticks and freeze until completely frozen (around 8 hours or overnight).
Step 5:
To remove icy poles from moulds, dip mould briefly in a room temperature water bath. Pull stick to gently release.
Eat immediately, or place in a container and freeze.
