Welcome to the world of sushi bowls! You can customise this recipe with your favourite flavours and protein, and get that fresh sweet and salty taste you know and love. Sushi bowls are extremely quick and easy to make. If you’re really crunched for time, you can simply multiply the recipe, prep all of the ingredients and the dressing ahead of time, and pop it all in the fridge for when you get hungry.

  • 1/2 cup brown rice
  • 1 tsp canola or peanut oil
  • 150g firm tofu, cubed
  • 1 tsp sesame oil
  • 1 tsp soy sauce
  • 1 tbsp rice vinegar
  • 1 cup leafy greens (like spinach)
  • 1/2 carrot, peeled and grated
  • 1/2 baby cucumber, diced
  • 1/2 avocado
  • 1 spring onion, chopped
  • 1 tsp sesame seeds
  • 1/2 nori sheet, shredded
  • 1 tsp coriander, leaves picked

Method

Step 1:

Rinse the rice, then cook in 1 cup boiling water or according to package instructions. Drain and set aside.

Step 2:

Meanwhile, heat canola or peanut oil in a pan, then fry off your tofu until golden brown. Set aside.

Step 3:

Add sesame oil, soy sauce and rice wine vinegar to a bowl, and whisk with a fork to make the dressing. Set aside.

Step 4:

Build your bowl. Add the rice first, followed by your greens, grated carrot, diced cucumber, cooked tofu, and avocado.

Step 5:

Top with spring onion, sesame seeds, nori and coriander. Add the dressing and enjoy.
